WHO COOKED BETTER? ME VS MAMA KUBURAT’S RICE, BEANS AND STEW

Hey Everyone!
I hope you are doing great and hopefully, recovered from the shock of the U.S. Elections. I bet it will be recorded as the shock of the century. I had dreamt of Hillary Clinton as ‘Madame President’, imagined her giving speeches, thought about what her winning would mean for girls and women all over the world but okay, that did not happen. Donal Trump won! He won the elections and it sent shock waves all over the world.
Back to reality. I had passed by a bukka weeks ago and I smelt the woman’s food. Though I would have loved to stop and order for a plate of rice and stew, I just couldn’t. Typically not my style. And so, I vowed that I would go home and try out the rice and beans combo and present before my family….I bet I killed it!
It was an early lunch for the family and they so loved it. I had leftover rice and so, cooking the beans with a pressure cooker took no time at all. The kids helped to pick and clean the beans. I really do wash beans severally and rinse with clean water because of the chemicals used for preservation.

How to preserve your beans? Pour beans into a plastic container and put in the freezer. Without power? Pour beans into a plastic container, add dried alligator pepper and cover tightly. If stored this way, could preserve for longer period and keep away flying insects.
My kids prefer poultry to red meat these days and so, I made chicken stew like the bukka women do and it came out really nice and tasty. The trick is fry, fry, fry and lots of pepper. It was not exactly like what I perceived but it came out close to perfection. Thumbs up!
