Hello everyone! I hope you had a beautiful weekend. The Governorship elections in the states didn’t go smoothly in some states which is quite unfortunate so many lives lost, many injured….seriously, politics should not be a do or die affair but I am quite hopeful that one day we will realise that peace drives development faster than violence and that whatever we sow, that is what our we and our children will reap.
There are absolutely things that makes the weekend “a weekend”……unusual things that don’t happen during the week and if yours didn’t turn out like mine….don’t panic my dear….you may have won a yourself…a holiday. There are 3 things I find myself doing every weekend and they are;
Do something I don’t do during the week
This time, it is because of the petrol scarcity across the country. For those of us in Abuja, most of the roads leading into the city were lined with uniform men but I was really glad we could move freely within the city and since I didn’t plan to do any outing, I had a well rested weekend. Saturday morning, I rushed out of bed to go look for fuel….the persistent fuel scarcity is killing me…I tell you. I queued for almost 2 hours trying to fill my tank and they collected an extra 500 naira for filling up my 20 litres jerry can; which I needed for generator….that is how we row in Nigeria. I don’t plan to buy fuel till the end of the week…..hopefully.
Anyway, got my fuel and some fruits and vegetables from the market…..had breakfast and slept off….my weekend has just begun.
Watch movies or soaps
There’s no weekend without Telemundo…..all the episodes I missed during the week…I gotta watch em’. watched some other movies shown on DSTV.
Read some comments on blog and had to reply them…..blog strolling.
Cook a great meal
There’s no weekend without cooking a great meal or trying something new. I have longed to eat this local version of jollof rice for a long time but I have been really anxious about it….didn’t want to cook something the kids would not enjoy. But to my utmost surprise and greatest joy, it turned out great and everyone loved it.
What you’ll need to make this delicious bowl of rice
To serve 4
2 cups of parboiled rice
1 large onion, chopped
1 cooking spoon, palm oil
1 cooking spoon, tomato paste
2 tbl spoon crayfish, grinded
2 fresh peppers, grinded
3 medium size dried fish, deboned and washed
A pinch of salt
It is as simple as this. Wash hands thoroughly, put pot on medium heat, pour palm oil into a clean pot and add chopped onions. Fry onions till it is translucent but not burnt. Add the tomato paste to the hot oil and fry for about 10 minutes, keep stirring. then add the crayfish and pepper, add a little bit of water and leave to boil for about 10 minutes. Then add the rice, fish and salt, stir and leave to cook until the water dries up.
serve warm.
I served mine with fried meat…..to have that party rice effect.lol
