Are you salivating already? This recipe is a traditional recipe for making pap aka Akamu. Some people have mailed me severally to ask how I make Akamu and how I prepare the local cereal so that it is not lumpy and too thick. Some people also explained that they initially started with the Akamu recipe and ended up with a bowl of agidi….LOL. Anyway this is just to guide you on a stress free path to making Akamu. Enjoy!
To make fresh corn cereal (for four servings)
A clean oil- free bowl
5 tablespoons of raw smooth corn paste
¼ cup of cold water
3 cups of hot water
Cooking Directions
1. Wash your hands
2. In the oil-free bowl, Mix the raw smooth corn paste with the ¼ cup of cold water to a thick mixture.
3. Bring the 3 cups of water to boil, adding the water to the paste and stirring quickly, to avoid lumps until it is thick enough to your baby’s taste. Serve warm.
Cook’s Tip: There are two main types of corn available in the Nigerian market; yellow and white corn. The Yellow corn is more nutritious and best for children and if your baby does not like the taste of plain milk, you could mix the pap with milk which is a good way of getting the much needed calcium the toddler needs.
Variations: For a more nutritious pap for toddlers, you can add fresh well made Soya beans powder, groundnut (grinded), clean and grinded dry crayfish/prawns (Okporo) to the cereal and watch your baby grow healthy and strong.
