Last weekend I made some very delicious banana pancakes and it was very delicious. I didn’t plan to ingest so much flour that day but one big bite turned to five large pancakes disappearing before my very eyes. It was light, fluffy and the banana taste was on point. I beg you to try this recipe and tell me how it went especially for your kids.
Here’s how I made the yummy banana pancakes;
Ingredients
200g multi purpose flour
pinch of salt
2 sticks over ripe bananas
2 tablespoons of sugar
1 fresh egg, beaten
1 medium size onions, diced (optional)
1 fresh red pepper thinly diced (optional)
250ml of warm water
1 tablespoon vegetable oil
Cooking Directions:
- Wash your hands. Mash bananas and set aside.

- Sieve the flour and salt and sugar and pour into a mixing bowl. Add the egg, onions and pepper and gradually fold in the flour. Then add the mashed bananas, warm water and mix thoroughly to form a smooth batter.

- Heat the frying pan and brush lightly with coconut oil. Then, pour in enough batter to cover the surface slightly. Cook over moderate heat until slightly brown.
- Turn the other side of the pancake and cook for about 2 minutes under low heat. Serve warm with fruit juice or smoothie.
