Ingredients
4 medium size unpeeled ripe plantain, cut
pinch of salt (optional)
5 medium size fresh tomatoes, blended
2 small fresh peppers, blended

1 teaspoon of coconut oil
A handful of spinach, cleaned and chopped
A handful of scent leaves, cleaned and chopped

1 small onion bulb, diced
2 medium size mackerel, deboned and cleaned

Cooking Directions
1. Put the cleaned plantain in a steam cooker and steam for about 20 minutes. We want to preserve as much nutrients as we can so steam the plantains with the outer coverings (bark) and peel after steaming.
2. Heat the coconut oil in a sauce pan then add the diced onions and fry until transparent. Add the tomatoes and peppers, stir and allow to heat and dry up a little for about 8 minutes.
3. Then add the Mackerel into the tomato sauce, stir and allow to cook for another 5 minutes.
4. Stir and add vegetables. Stir again and set aside. Serve warm.
