COOKING WITH JAYNE: GARLIC MACARONI WITH PRAWNS TOSS

If you follow me on Instagram, this recipe would not be new to you as it was posted some time ago but I didn’t post it on my blog. The day I made this meal, I didn’t have any left over stew or tomatoes in my kitchen so I opted for a simple tasty sauce using curry and vegetables with medium size prawns to garnish it a little.
The kids enjoyed every bite and kept asking for more and before I knew it, a pack of macaroni was finished in less than an hour. This is easy to make as you can plan to prepare this for school lunch or when you don’t have an idea of what to prepare for the entire family. Prawns can be substituted with shredded chicken or deboned fish.
To make this delicious bowl of garlic macaroni with prawn toss, you will need:

parboiled macaroni

coconut oil
garlic, diced
onions, diced
carrot, chopped
green pepper, chopped
red pepper, chopped
prawns, cleaned
one tablespoon curry
one teaspoon for mixed spices
a pinch of salt
(Measurement depends on the number of persons)
In a clean wok or frying pan, add coconut oil and once it is hot, add garlic, onions and saute for 5 minutes. Then add the carrots, peppers and prawns to the mixture. Stir for about 5 minutes under medium heat. while stirring,  add the curry, mixed spices and a pinch of salt. Then pour in the parboiled macaroni, stir and allow to cook for about 7-8 minutes. Serve warm.
