Summer is officially over and we are grateful!
The fun things about the summer holiday was that I was able to sleep longer, try new recipes and include new co-curricular activities for the kids (and myself). During school year, I would get up in the mornings at 4am but during the holidays, I got up at 5:30am most times and would take my breakfast without rushing out as I would usually do and arrive at work at 8:30am. Also, the kids started their first coding classes and they excelled and enjoyed every bit of it. We also started dance classes on Saturdays and hopefully would continue during the school year as we really enjoy the dance sessions.
As we prepare for the new school year, top of my list is what the kids will be having for lunch. During the holiday, I tried some new breakfast and lunch recipes and the kids received them well so I’ll be incorporating them in the list of lunch recipes for school.
My list should inspire you on what to incorporate in your kid’s lunch bag. To stimulate appetite and increase nutritional value of the meal, a mixture of organic/natural fruits and vegetables should be encouraged. A small snack should also be included to the pack.
Monday: Spaghetti jollof with minced meat and vegetables (diced carrots, green peans etc), orange juice or one fresh orange peeled and cut, a cup cake and a bottle of clean water.
Tuesday: Vegetable coconut rice with water melon and pineapple juice/ cut in small portions in a small bowl, homemade cookies and a bottle of clean water.
Wednesday: Minced meat sweet potato porridge with spinach, with tangarine/avocado peeled and cut in small portions, puff puff and a clean bottle of water.
Thursday: Jollof cous cous with shredded chicken and vegetables (carrots, peas etc) with banana and a cup cake and clean bottle of water.
Friday: Fridays are usually half days and so I recommend something light and tasty that will make them look forward to the weekend. Chicken sandwich with fresh lettuce, tomatoes and dressing, pineapple and apple smoothie and some cookies.
These meals are low cost and can be enjoyed by older members of the family. Having a meal plan for the week helps you to budget appropriately, enables you to eat more nutritious meals and saves you the stress of worrying over eating the wrong things.
Additional tip: The food flask or food bowl and cutleries should be cleaned after every meal and aired after wash. The lunch bag or box should be washed frequently. Face napkins and towels should be kept clean too. Disposable napkins and towels are also recommended.
