COOKING WITH JAYNE: MIXED VEGETABLE NOODLES

Hey Everyone,

I hope you are doing great. The last six months were incredibly BUSY and overwhelming for me. My 9-5 job on a project is rounding up soon so there’s been lots of evaluation and reporting and so I must admit it has been a very busy time. The kids are getting ready to kick off the summer holiday and in my head I am like ‘where to?’ I have no idea but I think I would want them to engage in fitness activities; lots of dancing, exercising, sports and any other co-curricular activity that will enjoy.

And so, I have mixed vegetable noodles recipe for you. I am not a noodles fan but I know some moms who could swear that they give their kids noodles every single day and kids enjoy it too. I hate plain noodles! incorporating veggies and proteins makes the meal nutritious and adequate for the growing child.

Here is how to make mixed vegetable noodles:


Preparation time: 25 minutes.
Ingredients
1 tablespoon coconut oil
1 small garlic clove, finely chopped
1 small onion, thinly diced
1 small green pepper, thinly diced
1 small carrot, thinly chopped
15g fresh peas
spices (optional)
200g parboiled noodles
100g small chunks of chicken (without bones), cooked and cooled
Cooking Directions
1.        Heat the oil in a frying pan and fry the garlic, onions for 2-3 minutes.
2.        Add the carrots, peas and peppers and stir-fry for 2-3 minutes. Stir in the noodles.
3.        Add spices, chicken and stir thoroughly. Add some water or chicken stock to soften the vegetables cover and leave to continue cooking till the water is almost dry. Do not allow all the water to dry up because this causes the noodle to become too dry when it has cooled down. Serve warm.
