I hope you are doing great. I had saved this post in draft and too busy to put it all together and post it up on the blog. Finally, I am back and will just put this up and post a full recipe later. I used the slow roasting cooker that I got at the Abuja Trade Fair in October to roast the chicken after I had marinated in spices; ginger, thyme, curry, pepper and garlic. I think roasting is a healthy way to prepare and cook chicken, fish or meat. For weight watchers or anyone worried about getting extra calories, I am sure you will find this recipe useful especially as the holiday season is approaching.
To make the coconut jollof rice, I put some coconut oil in a pot, then some onions and then, some tomato paste. Allow the tomato paste to dry up while stirring the paste continuously. Once the oil starts to float on top, then add the coconut juice to the tomato paste, stir and allow to boil for about 10 minutes.
Then add the rice and cook till it is soft and moist. grate vegetables and add salad cream or mayonnaise for the salad.
Serve and get down to the main business.
