Officially, I am the queen of okra soup and nobody’s gonna take that crown off my head anytime soon. I just LOVE okra! It is very safe, can be eaten with anything and by everyone. It is always a winner for me especially, those days when you are so tired and you can’t really think of anything to cook for the family or guests…..Okra works well.
Last week, I was so busy and I could not find time to cook soup like I usually do at weekends and so, the week went by without swallow. We ate other meals like sweet potatoes and vegetables, rice and beans, beans and corn porridge, rice and fish sauce and so on. I longed for swallow so much and I vowed that we must have soup available every week and to break the swallow ‘fast’, I made a pot of uziza and okra soup and it was awesome!
I mean, everyone wanted an extra portion of the soup without swallow. The vegetables (uziza and ugu) were on point. The okra was not over cooked and the soup tasted very fresh and tasty. I think this recipe is a must cook for weight watchers, if you are cooking on a budget and if you don’t want to spend the whole day in the kitchen. For kids too!
Ingredients
Goat meat
Assorted meats
Ginded crayfish
Fresh pepper (grinded)
Chopped okro
Chopped Ugu leaves
Chopped uziza leaves
a pinch of salt
Half cooking spoon of palm oil
Spend time cooking the meat and other animal parts to make sure it is soft and chewable. Add the oil, crayfish and pepper, some warm water and leave to cook for about 15 minutes. The veggies; Okro, ugu and uziza should not be cooked for more than 10 minutes.
Balance like the chief or lolo that you are, wash your phalanges very well and settle down to this delicious mind blowing bowl of soup.
