The Easter holidays are almost over and as parents we are constantly reminded on the need to feed our children right.; giving them the right food, at the right time and in the right quantity. The more they eat nutritious food, the less visits to the hospital, the more number of days they stay in school and the stronger their bodies are to fight back diseases.
Today, I want to share a recipe and also, give you an idea of what a simple lunch for a school child should look like. My kids looooove coconut rice and they could finish a pot of coconut jollof rice in a jiffy and there would be no leftovers. The trick is that it tastes better than the conventional jollof rice and the chopped vegetables (carrots, sweet corn) gives it that special taste and flavor.
For most children, the wings and laps of a the poultry are the best parts because they are soft and malleable. But getting those parts of the chicken into the school lunch bowl can be extremely challenging as well as the eating.
I recommend that the poultry should be thoroughly cooked and chopped before it is mixed with the rest of the meal. This makes it a lot easier for the child to pick up and eat.
To make Coconut Jollof Rice:
Parboiled rice
Fresh tomatoes; grinded
Fresh pepper: grinded (optional)
1 Cooking spoon of groundnut oil
1 Onion bulb; diced
Steamed chicken parts; diced
1 coconut; de-shelled, grinded and sieved
Spices (optional)
Please note: some leftover stew could be used to hasten the process and the ingredients are dependent on the number of persons.
In a clean pot, under heat, add the vegetable oil. Stir fry the onions (garlic, if any), add blended tomatoes and pepper and fry for about 10 minutes. Then add the coconut milk and allow to cook for about 10 minutes. Then add the rice and the chicken, spices and allow to cook for about 15-20 minutes. then add the chopped vegetables. Allow to cool and then serve.
