WHYTE’S WEEKEND: NIGERIAN STYLE PANCAKES

Hey everyone!

Yes it is Tuesday and I am officially late. This post comes out Sundays but the internet has been bad and uploading photos, a nightmare. I had a restful weekend. When I mean restful, I mean that I didn’t go shopping and I spent the whole Saturday at home. I made this delicious pancakes and I laid on the bed most of the day. Life is good!
 
This is the Nigerian version of pancakes and bet m, you’ll want some more every time…no be jazz! I love pepper and the beauty of this pancake is that it is sweet and pepperish at the same time. Sweet because of the sugar and pepperish because of the little slices of fresh pepper.
 
Straight to business! chop onions and fresh peppers just the way you like it and if you have kids, just be mindful. beat eggs and mix them all up.

 
 
Add flour and sugar (a table spoon) to the mixture and mix thoroughly. Too thick, add some warm water to the mixture; giving you a semi liquid paste.
 
 
 
 
 
 
 

Just a table spoon of oil should do the job.

And there I was ready to pounce on the pancakes. I count myself blessed. I wish I could make pancakes for all the moms and kids at the IDP camps. One day……surely, one day!

Some pancakes and a cup of lemon tea…….straight to the heart and stomach.
