STEAMED PLANTAIN WITH SPINACH AND BEEF STEW

Hey Lovelies,
How body? I had planned to put this up weeks ago but that evil spirit called ‘procrastination’ did not leave me alone. Anyway, here it is oh boiled plantain with spinach and beef stew. I say beef with a lot of guilt in my mind. To be sincere, I have tried to keep beef/red meat away from my kitchen, my pot and my life but E HARD! Temptations and more temptations……and severally, I have fallen GBOSA!
My kids love beef, though they love chicken too…..but I cannot fail them with beef…..I always cook it right and they have never said no. But anyway, let us see what New year resolution I will make for 2016….. No more beef or maybe just a little beef or maybe MORE beef!

This recipe works for me when I don’t have strength to cook or I have little or no brain to understand the magic that must happen in the kitchen. You know that feeling when you just don’t have an idea what to cook but then you have plantain and some fresh vegetables. 
I usually boil my plantain with the skin because it saves the taste, keeps the colour and preserves the nutrients. and then I use left over beef stew and I just steam the vegetables for 1 minute.
And to know that it could be eaten as a meal for breakfast or for dinner makes it a pleasant idea and easy to prepare. This could serve for kiddies school lunches too and chicken stew of egg sauce could be used instead  of the beef.
