Here’s a winning recipe for the entire family. Sometimes as mothers we love to recreate dishes to fit our mood (tired to cook or trying out a new recipe) or the nutrition needs of the family. This particular recipe is one that the entire family will enjoy especially since it is tasty, nutritious and attractive. For some individuals, the Irish potatoes can only be fried but I always love to prove them wrong; it can be boiled, roasted, fried, baked and still taste delicious and healthy for weight watchers.
- Heat oil in a clean sauce pan, add onions and stir-fry until the entire aroma is released or until it is transparent.
- Add blended pepper and cook for about 10 minutes in medium heat, stirring continuously.
- Add chicken stock, liver, potatoes and salt and leave to cook for another 10 minutes.
- Mix the flour with water and add to the stock. leave to cook for another 5 minutes, continue stirring.
- Then add the vegetables; carrots, green peas etc.
- It is ready to serve. Serve warm with rice.
Ingredients
clean water
1 cooking spoon of olive oil (vegetable oil)
500 ml chicken stock
1 medium size onion, diced
1 cooking spoon of corn flour
2 small size fresh peppers, grinded (optional)
6 medium size Irish potatoes, peeled and washed
pinch of salt
1kg diced liver
3 medium sized carrots, diced
A handful of green peas

Cook’s tips: to garnish, you can add chopped green pepper, and/or spinach to the delicious meal.
