Hey everyone how are you doing? It was an amazing weekend and we give all the glory to God for our present and our future because the Bible says:
” eye hath not seen nor ear heard what God has prepared for those that love him” and even in the face of scarcity and challenging times……God is ever present and leading us through.
I had a much needed restful weekend but I wished I had more….weekends are usually not fun when electricity is poor and the substitute is not readily available. I had time to plan the new week and I already look forward to the public holiday next week Friday. I also made out time to make enquiries on some summer holiday activities for the kids…The earlier one starts to plan, the better.
My Sunday wasn’t so interesting as I had house chores to finish and especially, cooking for the rest of the week. I had started reading the ‘Wizard of the Crow’ by Ngugi wa Thiongo about two weeks ago and I love the satire and how funny the characters are, the book got me laughing my heart out……one of those moments, my daughter would ask “mommy, why are you laughing”?. I read a few pages to calm my nerves.
I prepared coconut rice for the kids and the loved it! My son is growing a pot tummy and he doesn’t care. To the coconut rice I added tomatoes, corn, carrots, chicken and sausage beef….they will lick their fingers after each meal that I am very sure. Looking forward to serving this for their lunches this week.
And for the Sunday special rice, It was basmati rice which didn’t take time to cook because I had soaked it in water for nearly two hours. The sauce was mostly vegetables; carrots, cabbage, green pepper, beef sausage and seasoned with a little bit of curry and some flour was added as a thickner. It was not just delicious and very tasty but also vey healthy and nutritious. The vegetables were not over cooked.
I still had time to check out my mails, blog stroll and visit my social media accounts. It seems all the news in Nigeria are about the current hardships the country is experiencing; poor power supply, fuel scarcity and insecurity. And with all of these problems, the citizens aren’t protesting on the streets…..unbelievable!
