Plantains are definitely in season. Last week I posted a boiled plantain and okro soup recipe and everyone loved it and then, just before the end of the week, Sisi Yemmie posted the fried plantain chips recipe on her blog and then I decided to try to make some chips for myself and my kids.
Anyway, it wasn’t difficult at all to prepare and to add a twist to the eating, I decided to make the avocado puree which also had some yoghurt in it. Eventually, I had fried plantain chips dipped in avocado puree as an afternoon snack.
It was delicious, yummy yum and fun! And I can’t wait to make it again. I added a little bit of dry pepper to the plantain before frying so it had this spicy taste which went well with the avocado puree and the sweet sour taste of the yoghurt also gave it this unique taste and feeling…..I’ll definitely try this AGAIN! And did I say, the kids loved it? they sure did.
Here’s the recipe
Ingredients
2 sticks of plantain, peeled and cut thinly (preferably half ripe)
A pinch of pepper, grinded (optional)
A pinch of salt (optional)
1 medium sized onion
Vegetable oil for frying
Cooking Directions
1. Wash your hands. Mix plantain, salt and pepper.
2. Pour the vegetable oil in a frying pan and leave in medium heat. Add the onion ball. When hot, gently pour the plantain into the oil and fry until it is golden brown. Put chips in a sieve for excess oil to drain out.
3. Serve warm.
