CHILD NUTRITION; BOILED PLANTAIN AND OKRO

 
 
 
As you all know I love to eat okro except you are a newbie on this blog. I can eat okro every week and I’ll never get tired of eating it. I could mix okro with left over stew, Okro with lots of vegetables, okro and yam. Okro is a vegetable itself and we weight watchers always find ways of indulging in varieties of nutritious, tasty and well-made meals that just don’t keep us trim and fit but also light and at the same time full.
Kids love plantain and most families can’t do without fried plantain, breakfast, lunch or dinner. The interesting thing about plantain (ripe, half ripe or unripe) is that it can be roasted, fried or boiled and I am a lover of all whether ripe or unripe, porridge or plain.
This boiled plantain recipe is one your kids will definitely love. It’s definitely a smart way to eat healthy, simple recipe and preparation time is short (but not as short as noodles) lol. Boiling plantain with the outer skin is the real deal as it helps to keep the nutrients from being lost and the colour too.
So here is how to prepare the delicious plantain and okro child friendly meal.

Ingredients
3 medium size ripe Plantains, peeled and sliced
Clean water
Cooking Directions
1.Wash the plantain thoroughly and cut into meduim slices with skin and put in a clean pot. Add water to boil.
2.When boiled, peel skin and set aside.
For the Okra Soup;
Ingredients
1 medium size onions, diced (optional)
1 medium size fresh Pepper, grinded (optional)
3 tablespoons crayfish, grinded
pinch of salt (optional)
2 tablespoons big -size crayfish (Okporo), grinded
1 cooking spoon red palm oil
200g of beef steak/boneless fish, steamed
A handful of fresh/ dry okra, chopped or grated
A handful of vegetable (pumpkin leaves), trimmed and chopped
Cooking Directions
1.            Wash hands. In a clean pot, add the onions, ground crayfish, big size crayfish and pepper, the fish/meat, salt, palm oil and some clean water and stir to combine well, and then leave to cook for about 20 minutes or until the fish/meat is softened.
 
2.            Add the grated okra, stir well and leave to cook. After about 8 minutes, you then you gradually stir in the chopped vegetable. Stirring, reduce the heat, cover and simmer. This process should take a maximum of 10 minutes to avoid over-cooking the okra and the vegetable.
3.            Serve warm.
Cook’s tips: Okra Soup is the choice Nigerian soup when you want to start weaning the child. This is because not only is Okra Soup very nutritious, it is also very easy for the toddler to swallow due to its slimy nature. And it tastes very good too!
