Cous-cous is a made of semolina (durum wheat) cooked by steaming. It is well known child friendly meal served with meat, fish and vegetables. The cous cous that is sold in the Nigerian market has been pre-steamed and dried and that is why it cooks quickly. Most care givers love this delicious meal because it is light, tasty, nutritious and easy to cook. Today, I’ll be sharing my cous cous recipe with you. Using left over stew can make preparations for this meal really easy.

Ingredients
2 tablespoons of olive oil
1 small size onions, diced
1 medium garlic clove, diced
4 fresh tomatoes, grinded
1 small pepper (optional), grinded
pinch of salt (optional)
deboned steamed chicken/fish and stock
2 cups of couscous, cooked and cooled
2 fresh carrots, thinly diced
1 small green pepper, diced (optional)
Cooking Directions
1. In low heat, heat the oil in a small sauce pan
2. Add onion and garlic and sauté for 3 minutes until soft
3. Then add the grinded ingredients; tomatoes, peppers and salt. Using a ladle, Stir thoroughly. Add chicken/fish stock; stir
4. Fry gently and stir continuously. After about 15 minutes, add the chicken/fish and leave to boil.
5. Add couscous to the mixture and stir thoroughly. Cover the pot and allow to cook under medium heat for about 15 minutes
6. Add carrots, green pepper and peas. Stir and serve.
