Okra Soup is not new to Nigerian families especially those who have toddlers and very young children. Okra just makes feeding a lot easier for kids. It is a vegetable, highly nutritious and can go with almost everything….just name it! It is a special delicacy and I can proudly say I eat okra soup every week. Some myth or traditional belief request that pregnant women should not eat okra soup because they say it affects the unborn child and after birth, the child will be salivating uncontrollably. Well, if you have ever heard or you know anyone that believes in this myth, kindly tell them it is a big fat lie!
Okra contains a lot of iron which a pregnant woman and her baby needs and should be eaten anytime, anywhere without fear. It is one of the easiest soups to prepare and easiest for toddlers to eat. And guess what, I’ll be sharing my child friendly okra recipe with you on this blog.
1 medium size fresh Pepper, grinded (optional)
3 tablespoons grinded crayfish
a pinch of salt
2 tablespoons grinded big -size crayfish (Okporo)
1 cooking spoon Red Palm Oil
200g of beef, steamed/boneless fish
A handful of fresh okra, chopped or grated
A handful of vegetable (pumpkin leaves), trimmed and chopped
Cooking Directions
In a clean pot, add the ground crayfish, big size crayfish and pepper, the fish/meat, salt, palm oil and some clean water and stir to combine well, and then leave to cook for about 20 minutes or until the fish/meat is softened.
Add the grated okra, stir well and leave to cook. After about 8 minutes, you then you gradually stir in the chopped vegetable. Stirring, reduce the heat, cover and simmer. This process should take a maximum of 10 minutes to avoid over-cooking the okra and the vegetable.
Wash hands; serve with eba, mashed potatoes, pounded yam etc.
Cook’s tips: Okra Soup is the choice Nigerian soup when you want to start weaning the child. This is because not only is Okra Soup very nutritious, it is also very easy for the toddler to swallow due to its slimy nature. And it tastes very good too!
