Jollof Rice Recipe For Kids: Way To Go!

As we all know, Sundays without serving rice for lunch is an incomplete Sunday. Today I will be sharing my Jollof rice recipe with you. The key with cooking rice for kids is making it soft not marshy but easy to swallow and digest. As much as possible,  keeping the rice moist and tasty is very important.

Jollof Rice (12 Months+)

For four servings

60 minutes

Ingredients

1 cooking spoonful of vegetable oil

3 medium size onions, diced

3 large fresh tomatoes, grinded

2 large fresh peppers, grinded (optional)

2 spoonfuls of crayfish, grinded (optional)

pinch of salt

½ kg of steamed meat or chicken and stock

200g rice, partially boiled and cooled

Cooking Directions
1. Wash your hands

2. Heat the oil in a deep pot, and then add the onions, when it is almost transparent, add the grinded ingredients; tomatoes, peppers, crayfish and stir thoroughly using a ladle.

3. Fry gently and stir continuously. After about 15 minutes, add the meat/chicken stock, and leave to boil.

4. Add some water, salt, meat/chicken and the partially boiled rice to the mixture and cook for about 20 to 25 minutes or until very soft. Cover and allow to simmer under medium or low heat stirring occasionally. Garnish with vegetables and serve warm.

Variations; you could fry the steamed meat or chicken (this is optional, since frying reduces the nutritious value of the meat and increases cholesterol level) and then use the oil to fry the onions and the rest of the mixture for the Jollof rice.

Note; For a more nutritious meal for your kids, you can also add chopped carrots, green beans, peas and green pepper to the Jollof rice.
