Ingredients (To serve four)
2 cups of beans (preferably brown beans)
2 large peppers
1 medium sized Onion
pinch of salt
vegetable oil for frying
Cooking Directions
1. Wash your hands
2. Soak the beans for about 20 minutes; remove the skin of the beans by rubbing with both hands and rinsing well with a sieve. If you want to use your blender, after washing, soak the beans in water for another 30 minutes to soften then blend.
3. Blend the pepper separately and Chop your onions. Pour the grinded beans in a mortar or in a bowl and add the pepper, onions and salt and stir continuously. By stirring, you are making it lighter and incorporating air. Stir until it feels lighter.
4. Pour the groundnut oil in a frying pan and leave in medium heat. When hot, use a spoon (the size of the spoon depends on the size and shape of the Akara) to pour the paste in to the hot oil. Fry until it is golden brown. Serve warm.
