Child Nutrition; finger food for children (Masa)

As your baby develops better finger control (usually around 7-8 months) introducing finger foods will help to develop the skills of biting, chewing and self-feeding. Finger foods should be easy to pick up, hold and should not have bones or seeds (pips). You should also avoid hard foods or very small items like groundnut until the baby is older. Remember never to leave your baby alone whilst eating as sometimes babies swallow food in their mouths without chewing and choking can be a real hazard.

Masa (9 Mths+)

Ingredients (To serve four)

2 cups of masa rice (tuwo rice)
1 cup of rice
1 teaspoon of potash mixture
tablespoon of yeast

1 medium sized onion, diced
2 tablespoons of granulated sugar (optional)
soya bean oil for frying

Cooking Directions

1.    Wash your hands

2.   Cook one cup of rice and add to the tuwo rice. Soak rice for about 10- 12 hours. Grind rice in minimal water so that it comes out like thick paste.

3.   Add the onions, yeast and cover mixture. Leave the mixture over night.

3. Heat the Kasko (Cocotte). Fill the Cocotte halfway with oil and halfway with the mixture and shallow fry. Each Cocotte fries one ball at a time. Serve warm.

Note:This delicious mouthwatering meal is from the Northern part of Nigeria. The rice for masa is different from the normal rice in the market; it looks different and very unique too.
